{"id":3197,"date":"2011-09-08T15:30:51","date_gmt":"2011-09-09T01:30:51","guid":{"rendered":"http:\/\/www.midweekkauai.com\/?p=3197"},"modified":"2011-09-08T15:30:51","modified_gmt":"2011-09-09T01:30:51","slug":"spicing-up-ahi-for-poke-and-salad","status":"publish","type":"post","link":"https:\/\/hawaii.carpentermediagroup.com\/mwkauai\/entertainment\/sam-choys-kitchen\/spicing-up-ahi-for-poke-and-salad\/","title":{"rendered":"Spicing Up Ahi For Poke And Salad"},"content":{"rendered":"<p>This week, guests George Szigeti and Terry Tatsugawa from Young\u00e2\u20ac\u2122s Market Company visit the show.<\/p>\n<p>CLASSIC AHI POKE<\/p>\n<p>* 1 pound ahi, cut into 1\/2or 3\/4-inch dice<br \/>\n* 1 cup fresh seaweed, rinsed and chopped<br \/>\n* 1 cup chopped onion<br \/>\n* 1 Hawaiian chili pepper, trimmed and minced, or 1\/2 teaspoon red chili pepper flakes<br \/>\n* 2 tablespoons shoyu<br \/>\n* 1 teaspoon sesame oil<\/p>\n<p>Combine all ingredients and mix well. Refrigerate in a covered bowl until ready to serve.<\/p>\n<p>SPICY AHI SALAD<\/p>\n<p>* 2 6-ounce ahi fillets<br \/>\n* 1\/2 cup shoyu<br \/>\n* 1\/4 teaspoon sesame oil<br \/>\n* 1\/2 tablespoon minced fresh cilantro<br \/>\n* 2 tablespoons thinly sliced green onions<br \/>\n* 1 tablespoon minced fresh garlic<br \/>\n* 1 tablespoon peeled and minced fresh ginger<br \/>\n* 1\/4 teaspoon white pepper<br \/>\n* 1 1\/2 teaspoon brown sugar<br \/>\n* 1\/2 teaspoon ground five spice powder<br \/>\n* 1 tablespoon black sesame seeds<br \/>\n* pinch of dried chili pepper flakes or 1 fresh Hawaiian chili pepper<br \/>\n* Cowboy Gravy<\/p>\n<p>Combine ingredients. Stir until sugar dissolves. Marinate ahi fillets for about 20 minutes. Sear for four minutes on each side, then place on a bed of mixed greens. (You can also place soba noodles on mixed greens, then place ahi on top). Top with Cowboy Gravy.<\/p>\n<p>For Cowboy Gravy:<\/p>\n<p>* 1 1\/2 cups mayonnaise<br \/>\n* 1\/3 cup sugar<br \/>\n* 1\/4 cup shoyu<br \/>\n* 3\/4 tablespoon kuro goma (black sesame seeds)<br \/>\n* 1\/2 teaspoon sesame oil<br \/>\n* 1\/8 teaspoon white pepper<br \/>\n* 1 tablespoon water (to adjust thickness)<\/p>\n<p>Whisk all the ingredients together until they are wellblended. If it\u00e2\u20ac\u2122s too thick, you can whisk in a little water, a few drops at a time, until you get the consistency you like.
